ALMOND BUTTER CUPS

Are you on a ketogenic or low carb diet and don’t know how to satisfy your sweet tooth without reaching for the sugar?  Try these amazingly indulgent Almond Butter Cups.  They’re great little fat bombs that are completely sugar free, made with just almond butter, coconut oil, cocoa powder, and stevia, and so easy to make.  Read on to find out how to make these delicious fudgey treats.

It can be really hard to satisfy a sweet tooth when you’re on a keto/low carb diet.  Eventually without the sugar intake your taste buds do adapt, but what do you do in the mean time?  Make your own sugar free treats!  It sounds like a lot of effort but with these Almond Butter Cups it really couldn’t be any easier.  Just mix a few ingredients together, freeze them, and voila!  Little cups of chocolate and nut butter heaven.  

These are devilishly more-ish so some restraint may be required, but they do make for great fat bombs to boost your fat and calorie intake that can be tricky to do on a full keto diet.  Gotta make up that 75% fat intake somehow!    
 
According to my calculations these Almond Butter Cups are roughly 100 calories each, with 10g fats and 1g carbs.  

So give them a try.  Just 5 ingredients and 25 minutes later and you’ll be in nut butter heaven.  Word of warning -  eat them straight from the freezer as they melt quite quickly! 

Makes:  6 cups     Prep Time: 5      Chill Time: 20 mins     Total Time: 25 mins
 
INGREDIENTS:

  • 2 tbsp. coconut oil

  • 4 tbsp. almond butter

  • 1 tsp vanilla extract

  • 2 tbsp. cocoa powder

  • 2 tsp stevia or to taste

 
DIRECTIONS:

  1. Melt together the coconut oil, almond butter and vanilla extract until smooth and combined

  2. Divide the mixture in half.  Keep one half aside for later, and mix the cocoa powder and stevia into the other

  3. Divide the chocolate mixture evenly into cupcake liners gently tapping the tray to ensure a smooth flat surface

  4. Place the tray into the freezer for 10 mins

  5. Once the chocolate layer has set pour on the remaining almond butter mixture and return to the freezer for another 10 mins

  6. Eat straight from the freezer!
